Walk into any pastry shop in Italy and you will find some version of honey sesame candy. It is popular throughout the Mediterranean in various forms.  Some variations are soft and chewy. This one is not. While admittedly, this sweet with ancient origins is no friend to your dental fillings, it is delicious and addictive in its simplicity. and with only three ingredients it could not be easier.

Do know that you will need a candy thermometer to make this – there is no way of knowing if you are at the correct “crack” stage without it.
